2017 CSA Week 9

Hello Farm Friends!

Man, those bags were heavy last week, and that certainly isn’t changing this week as we’ve got more winter squash on the way.

This week I’m hoping to get you not one, but two winter squash. First up is the spaghetti squash, which many of you have been asking about. Spaghetti squash is one of my favorite vegetables to grow, and I like to think we’ve gotten pretty good at it over the years! If you haven’t cooked it before, it is super simple, so don’t be intimidated. Check out this recipe on how to cook it. I recommend putting a half-inch of water in a ceramic dish to help steam the squash.

Next up is an heirloom squash I’ve experimented with for the last few seasons called the Lakota squash. This winter squash was originally grown by the Lakota Sioux, and has a similar taste to butternut squash, but is much better looking (and larger)! Make sure you’ve got friends coming over when you make this one, or be prepared for a lot of leftovers!
